Sufra Dayma:

Steamed Date Pudding

Ingredients:

500 gms dates (chopped)

3/4 cup brown sugar

3/4 cup water

1 tbsp vinegar

2 eggs (beaten)

1 tbsp rum

2 cups plain flour

1/2 cup self-raising flour

1 tsp bicarbonate of soda

1 tsp cinnamon

1/2 cup milk

90 gms butter

Method:

Place dates, butter, sugar and water in saucepan. Stir over low heat, until butter melts and sugar dissolves. Increase heat, bring to the boil, reduce heat and simmer for five minutes. Remove from heat, add vinegar and cool. Add combined eggs and rum. Mix well. Fold in sifted dry ingredients alternately with the milk. Mix well. Spoon mixture evenly into a greased two-litre pudding basin. Cover and steam for two to two and half hours, or until cooked. Serve hot with cream or vanilla ice-cream.
