Sufra Dayma:

Carrot and Walnut Cake

Ingredients:

11/2 cups self-raising flour

3 eggs (lightly beaten)

1 cup brown sugar

1 tsp bicarbonate of soda

11/2 tsp ground cinnamon

2 cups grated carrot

1 cup chopped walnuts

1 cup corn oil

Icing:

250 gms cream cheese (at room temperature)

1 cup icing sugar

1 tsp vanilla

Beat cream cheese, icing sugar and vanilla with electric mixer until thick and well combined.

Method:

Combine oil, sugar and eggs in a bowl and whisk well. Sift flour, soda, and cinnamon over the oil mixture. Stir gently. Add carrots and walnuts. Mix well. Spread mixture into prepared pan. Grease and line base of a 20cm cake pan. Preheat oven to 180 degrees Centigrade. Bake for 45 to 50 minutes. Cool 10 minutes in pan before turning onto wire rack. When completely cooled, spread icing over the cake.
