Prune Fudge Slices

Ingredients:
1/2 cup pitted prunes (chopped)
1 cup self raising flour
3/4 cup brown sugar
1 egg (beaten)
1 tsp. finely grated lemon rind
2 tbsp. golden syrup
2 tbsp. cocoa
100 gms. butter
Method:
Place the butter, sugar, cocoa and golden syrup in a saucepan, and stir over low heat until the ingredients are combined. Allow to cool. Add the remaining ingredients and mix thoroughly. Spoon into a greased and lined lamington or non-stick tin and press down firmly. Bake for 25 minutes at 180 degrees Celsius. Leave in tin to cool before inverting and then cut into slices. Serve plain, with cream or with vanilla ice-cream.
