Sufra Dayma:
Cheese courgettes

Ingredients:
400 gms courgettes (scrubbed)
75 gms plain flour
1 egg + a dash of milk (beaten)
2 tbsp water
75 gms breadcrumbs
100 gms grated Parmesan cheese
Cooking oil for frying
Salt + pepper
Method:
Cut courgettes diagonally into 5 mm slices. Sprinkle with salt and pepper. Mix the egg and milk with water in a deep bowl with a fork. Mix the Parmesan with the breadcrumbs. Dip the courgette slices first in flour, then in the egg and finally in the Parmesan and breadcrumb mixture. heat some oil in a frying pan. Fry courgette slices in batches, over medium heat, filling all spaces of pan, until goldened on both sides. Leave to drain on kitchen paper towels. Serve with raita and crispy pita bread.
