Sufra Dayma:

Sweet Couscous with Mango & Nuts

Ingredients :

2/3 cup couscous

1/3 cup sultanas

1 1/4 cups boiling water

2 tbsp pine nuts (or) slivered almonds

1/4 cup honey

2 ripe mangoes (peeled and sliced)

25 gms butter

1 tbsp butter

Method :

Place the couscous and sultanas in a medium heatproof bowl. Pour over the boiling water while whisking with a fork. Cover and set aside for 5 minutes or until all liquid is absorbed, and the sultanas are plump. Use a fork to separate the grains. Heat a medium non-stick frying pan over medium heat. Add the tablespoonful of butter. Stir to golden brown. Strain and remove over kitchen paper towels. Melt the butter in the same pan over medium heat until foaming. Add the couscous mixture and honey. Cook, stirring for a couple of minutes only until just heated through. Spoon among serving plates. Arrange mango slices on top and serve sprinkled with the nuts, and added cream (optional).
