Sufra Dayma:

Creamy Chicken and Vegetable Soup


Ingredients:

300 gms chicken fillet (diced)

1 onion (chopped)

3 cups chopped mixed vegetables (sautéed) eg.: broccoli, carrot, peas, green beans, mushrooms

1/2 cup boiled ( al dente ) orzu noodles (or any other small shaped kind)

375 ml milk

2 chicken bouillon in one litre water

2 tbsp cornflour

Salt + pepper + grated nutmeg

Oil + butter

Method:

Heat oil and butter in a large cooking pan. Add onion stirring for one minute. Add chicken pieces, season and stir. Add chicken stock, bring to the boil, cover and simmer until chicken is half done. Dissolve cornflour in cold milk. Add to chicken, stirring constantly until thickened. Add noodles and simmer for 5 minutes. Add vegetables, stir to bring back to the boil and simmer for 5 more minutes. Re-season to taste and serve.
