Chinese Green Fried Rice

Ingredients:
2 cups long-grain rice (soaked in hot water for 1/2 hour)
1 medium onion (finely chopped)
2 garlic cloves (finely chopped)
6 green shallots (finely chopped with green stems)
2 large green chillies (finely chopped)
1 cup fresh coriander leaves (coarsely chopped)
1 tsp castor sugar
Salt + pepper
2 tbsp vegetable oil
Method:
Heat oil in a large cooking pan. Add onion and stir until soft. Add garlic, shallots and chilli, and stir-fry until tender. Rinse soaked rice and drain. Add to pan and stir-fry for 5 minutes. Add sugar ad season. Cover with water or vegetable stock. Bring to the boil. Stir to combine all ingredients, then place on a heat diffuser over low heat, covered. When cooked through, add coriander and stir to mix and remove from heat. Allow to rest for 5 minutes, then serve.
