Strawberries in Vanilla Syrup

Ingredients:
500 gms strawberries (hulled and halved)
1 cup water
1 cup castor sugar
1 tbsp lemon juice
1 tsp vanilla extract (not powdered vanillin)
Vanilla Ice-Cream
Method:
Combine water and sugar in a medium saucepan. Stir over low heat, without boiling, until the sugar dissolves. Bring to the boil. Reduce the heat simmer, uncovered, without stirring. Add the lemon juice after 5 minutes, and leave to simmer for 5 more minutes. Add the vanilla extract away from heat. Stir it in and leave syrup to cool until just warm. Place strawberries in a serving bowl. Add the warm syrup. Stand, covered, for 30 minutes before serving. Scoop the ice-cream and distribute scoops around the strawberry. Drizzle two tablespoonfuls of vanilla syrup on top of the ice-cream. Sprinkle some roasted nuts on top (optional) and serve.
