Orange Cake

Ingredients:
2 cups self-raising flour (sifted)
1/2 cup castor sugar
2 eggs
1 tsp vanilla essence
2 tsp finely grated orange rind
1/4 cup orange juice
1/4 cup milk
1 orange (peeled and sliced)
1 tbsp marmalade (optional)
125 gms butter (cubed)
Method:
Beat butter and sugar together until light and creamy. Add eggs, one at a time, beating well after each addition. Mix in orange rind and vanilla. Lightly fold flour into creamed mixture, alternately with combined juice and milk. Spoon mixture into a greased 20 cm. ring tin. Smooth top with a spatula. Arrange orange slices over the top. Place cake in a moderate preheated oven at 180 degrees, for 40-45 minutes, or until cooked. If desired, brush top of hot cake with marmalade to glaze. Allow to cool in tin for a few minutes. Turn onto a wire rack to cool completely. Serves 8-10
