Sufra Dayma:

Chocolate Topped Slices

Ingredients:

1 1/3 All Purpose plain flour (sifted)

1/2 cup brown sugar

125 gms butter (melted)

Topping:

2 tbsp flour

2 eggs (lightly beaten) + vanilla essence

3/4 cup brown sugar

1/2 cup desiccated coconut

200 gms milk chocolate (chopped)

100 gms slivered almonds

Method:

Preheat oven to 180 degrees. Grease and line a 3 cm. deep, 16 cm. x 26 cm. (base) lamington or non-stick pan: ( if latter, no need to line). Combine butter, sugar and flour in a bowl. Mix well. Press into base of prepared pan. Bake for 14 to 16 minutes or until lightly goldened. To make topping, place chocolate in a heatproof bowl over a pan of boiling water, stirring continuously as soon as it starts melting. Remove when completely melted and smooth. Add eggs and vanilla. Mix well. Stir in sugar, flour, coconut and almonds. Spread mixture over warm base. Bake for 18-20 minutes, or until firm to the touch. Allow to cool completely in pan. Cut into squares to serve. Makes 16.
