Haidy's 'Oreo' Cheesecake

Serves: 6 - 8
Ingredients:
30 "oreo" cookies
65 gms (or) 1/2 a stick butter (melted)
Filling:
800 gms white cream cheese
1 cup sour cream
4 eggs (whole)
1 tsp vanilla extract
15 "oreo" cookies, extra (crushed coarsely, by hand)
Method:
Process 30 cookies until mixture resembles fine breadcrumbs. Add butter. Process until just combined. Using one hand, press crumb mixture evenly over base of 21- 22 cm springform non-stick tin. Beat cheese and sugar until well smooth. Add sour cream and beat until combined. Add vanilla and beat in eggs, one at a time, on high speed and for 2 minutes, until mixture is fluffy. Turn mixture into a bowl. Gently fold in extra cookies to distribute within mixture. Add over crust. Bake in a slow preheated oven at 170 degrees for 45 minutes. Allow to cool at room temperature. Refrigerate, covered, for 3-4 hours, or overnight. Allow to set at room temperature before serving. Enjoy!
