Chocolate Wafers

Makes about 12
Ingredients:
2 tbsp plain flour (sifted)
1 tbsp cocoa
2 tbsp thickened cream
60 gms butter (melted)
Vanilla
3 egg whites
1/4 cup brown sugar
1/4 cup castor sugar
Method:
Beat sugars, egg whites and vanilla with an electric beater, in a small bowl until frothy. Beat in sifted flour and cocoa, then cream and butter. Leave mixture to stand for 10 minutes. Spoon about two tablespoonfuls of mixture onto each end of paper- lined baking sheets. Allow room for spreading. Spread out mixture to form 12 cm circles, thin in thickness. Bake at 160 degrees in a preheated oven for 10-12 minutes, or until edges begin to darken. Cool on tray for a few minutes then transfer onto a wire rack. Store in an airtight container to maintain crispness.
P. S. : You can substitute the cocoa with cinnamon powder for another flavour.
