Apple and Fruit Wholemeal Muffins

Makes 12
Ingredients:
1 1/2 cups wholemeal self- raising flour (sifted with a pinch of salt)
1 cup toasted muesli
1/2 cup brown sugar
3/4 cup desiccated coconut
2 green apples (peeled, cored and chopped)
1 cup frozen mixed berries (or fresh strawberries)
1 banana (peeled and mashed)
3/4 cup walnuts (chopped)
1 1/2 cups milk
1 egg (lightly beaten with vanilla)
Pinch of cinnamon
Method:
Preheat oven to 180 degrees. Lightly grease a 12 X 1/2 cup capacity muffin pan. Mix together coconut, sugar, flour, nuts, muesli, apple, berries and cinnamon in a large bowl. Combine banana, egg and milk in a jug. whisk with a fork to combine. Add to dry ingredients. Using a large metal spoon, stir gently to combine. Spoon mixture into prepared muffin pan. Bake for 20 - 25 minutes, or until lightly browned. Stand in pan for 5 - 10 minutes, then turn onto a wire rack. Serve warm.
