Sufra Dayma:

Chicken'n' Cream

Serves 4 - 6

Ingredients:

500 gms chicken breast fillets (cubed)

1 onion (quartered, thinly sliced)

500 ml cream + 1 beaten egg yolk

1/4 cup grated yellow cheese

Oil + butter

Salt + pepper + grated nutmeg

Method:

Heat oil and butter in a cooking pan. Add chicken cubes. Stir to slightly brown. Remove with a slotted spatula and keep aside. Add onion and stir until tender. Add back chicken cubes. Cover, over low heat, to cook in its own juices. When liquid is absorbed, add cream. Stir only to combine. Season and remove from heat. Stir in grated cheese. Remove into an oven- proof dish, in one layer. Bake in a preheated oven at 200 degrees, covered, for 40 minutes. Remove cover and allow top to slightly brown, for an extra 5 minutes. Serve with mashed potatoes and sautéed vegetables.
