Sufra Dayma:

Chicken and Pine Nut Meatloaf

Ingredients:

750 gms chicken mince

1 onion (finely chopped)

2 garlic cloves (crushed)

1 1/2 cups fresh breadcrumbs

1 egg (lightly beaten)

1/3 cup pine nuts (chopped)

3/4 cup basil leaves (finely shredded)

1/4 cup parsley leaves (chopped)

Olive oil

Salt + pepper + nutmeg (grated)

Method:

Preheat oven to 180 degrees. Lightly grease a 7 cm deep, 10 cm x 20 cm (base) loaf pan. Heat oil in a frying pan over medium heat. Add onion, garlic and nuts. Cook, stirring until softened (around 8 minutes). Allow to cool. Combine mince, breadcrumbs, herbs, egg, onion mixture and seasoning. Mix well. Spoon mixture into pan. Press down. Bake until goldened. Stand in pan for 10 minutes. Slice and serve with a rich green salad.
