Sufra Dayma:

Date and Walnut Biscuits

Makes about 50

Ingredients:

1 1/2 cups self-raising flour (sifted with a dash of salt)

1/2 cup finely chopped dates

1/2 cup finely chopped walnuts

1/2 cup castor sugar

1 egg

1 coffee spoonful vanilla essence

1 tsp ground cinnamon

Walnut halves

180 gms butter

Method:

Beat butter and sugar in a small bowl with an electric mixer, until light and fluffy. Add egg and vanilla. Beat until well combined. Stir in sifted flour and cinnamon. Stir in dates and chopped walnuts. Mix well. Roll tablespoonfuls of mixture into balls. Place onto greased baking trays allowing room for spreading. Lightly flatten the top of each biscuit with a fork. Place a walnut half into the centre of each biscuit. Bake at a preheated 190 degree oven for about 10- 12 minutes, or until golden. Cool on trays for a few minutes then transfer onto a wire rack to cool completely then store in an airtight container. Happy Eid...
