Sufra Dayma:

Chicken in Creamy Blue Cheese Sauce

Serves 4

Ingredients:

1 kg chicken breast fillets (quartered)

1 cooking onion (finely sliced)

1 large spring onion with green stems (finely chopped)

1 large red tomato (finely diced)

100 gms blue cheese (at room temperature)

1/2 cup cooking cream

Salt (to taste) + pepper + basil + sage

Butter + oil

Method:

Heat butter and oil in a wide cooking pan. Add chicken pieces in batches. Slightly brown on all sides. Remove with a slotted spatula. Add cooking onion. Stir to slightly brown. Add tomato and seasoning (all but salt). Add chicken and stir to combine. Cover over low heat, allowing to cook. Add hot water, if necessary. When chicken is done, add spring onion. Stir to combine. By means of a spatula, remove mixture aside, allowing enough room for crumbled blue cheese. Press to emulsify against hot pan base. Stir to mix and integrate with mixture. Add cream. Stir and taste for salt. Bring to the boil and remove from heat. Serve with buttered pasta aside.
