Sufra Dayma:

Walnut and Banana Loaf

Makes one loaf


2 cups self-raising flour

1 tsp bicarbonate of soda

70 gms brown sugar

1 cup milk

2 eggs (lightly beaten)

Vanilla essence

100 gms walnuts (coarsely chopped)

1 cup mashed banana

2 tsp ground cinnamon (optional)


Preheat oven to 180 degrees. Lightly grease the base and sides of a 6 cm- deep, 20x10 cm loaf pan. Sift the flour into a large bowl. Add the sugar, walnuts and bicarbonate of soda. Stir to combine. Add the egg, vanilla, milk and banana, (cinnamon if used), and gently fold until well combined. Spoon mixture into loaf pan. Bake in oven for 45 minutes, or until a skewer inserted into the centre comes out clean. Set aside to cool completely. Cut into slices to serve.
