Sufra Dayma:

Baked Sweet Potatoes

Serves 8-10

Ingredients:

3 kg sweet potatoes (scrubbed, patted dry)

1 cup castor sugar

4 eggs

1 tsp vanilla extract

2 tbsp ground cinnamon

1 tsp baking powder

Knob of butter to coat

3 tbsp breadcrumbs

2 tbsp brown sugar

1/2 cup cream

Method:

Boil or bake, covered, sweet potatoes until tender. Peel skin and mash with a fork. In a medium-sized bowl, add eggs, vanilla, castor sugar and cinnamon. Cream together with an electric beater. Add cream and whisk to combine. Add baking powder and distribute well by whisking. Pour mixture over sweet potato mash and stir in to combine totally. Coat a 30 cm rectangular non-stick baking pan with butter and breadcrumbs. Discard excess non-sticking particles. Pour sweet potato mixture and flatten top by spatula. Sprinkle brown sugar on top and bake in a preheated oven of 180 degrees until top is golden; approx. one hour. Remove and allow to cool, then slice. Serve either plain or with vanilla ice-cream, or cream. Can be served warm or refrigerated.
