Sufra Dayma:

Seafood Pie

Ingredients:

300 gms white fish fillets

12 medium shrimps (shelled, diveined)

200 gms cooked crab meat

1 cup béchamel sauce

3 cups mashed potatoes (with milk and butter)

1 large onion (chopped)

1 large leek (sliced)

6-8 garlic cloves (sliced)

1 bouillon + 2 cups white wine

Juice of 2 lemons +rind (grated)

1/2 cup grated yellow cheese

1/2 cup chopped parsley

Salt + pepper + nutmeg

Butter

Method:

Boil fish and shrimps in bouillon and wine (retaining two tablespoons of wine aside). Remove and strain. Discard residue. Sautée onion, leek and garlic in some butter in a small pan. Remove into a rectangular baking dish making a bedding for seafood. Mix fish, shrimps and crab meat together. Season. Lay over onion bedding. Sprinkle lemon juice and retained wine. Cover with parsley and rind combined. Add béchamel sauce in a thin layer. Add potato mash by scraping first on all edges of dish, then add in centre. Sprinkle with yellow cheese and bake in preheated oven of 200 degrees until top is golden. Allow to set for 5 minutes and serve.
