Date and Walnut Crunchies

Ingredients:
300 gms ordinary biscuits (hand-crushed)
200 gms walnuts or pecans (coarsely chopped)
1 egg yolk
1 tsp vanilla essence
500 gms pitted soft fresh dates (or) dried
220 gms butter
Method:
Melt the butter in a saucepan over low heat. Add dates and stir to combine well with the butter. Add egg yolk and vanilla. Stir well to integrate. Remove from heat. Allow to slightly cool. Add walnuts and stir to combine, then the biscuits. Combine distributing evenly as much as possible. Remove into a rectangular tray or dish, so as to obtain a one-centimeter thickness of the mixture. Press well by hand or by the back of a spatula. Slice into small squares and refrigerate for a minimum of three hours. Re-slice once more over knife marks after refrigerating and serve.
