Sufra Dayma:

Creamy Chicken in Green Olive Sauce

Serves 4-6

Ingredients:

1 kg chicken fillets (thickly sliced)

1 large onion (thinly sliced)

1 large capsicum (any colour), coarsely chopped

2 tomatoes (diced)

1 tsp crushed garlic

1/2 cup pitted pickled green olives (quartered)

2 tbsp ketchup (hot or ordinary)

2 tbsp mustard

2 tsp lemon juice

3 tbsp sour cream

200 ml pouring cream

1/2 tsp of each: black pepper + allspice + rosemary +

thyme + basil + salt (to taste)

Butter + oil

Method:

In a large cooking pan, heat butter and oil. Saut...e onion. Add garlic and capsicum. Add chicken slices and stir to slightly brown. Add tomatoes and seasoning. Cover and cook over medium heat. When released juices are absorbed, add lemon juice. If liquid is needed, add very small quantity of hot water, until chicken pieces are done. Add mustard, ketchup, sour cream and pouring cream. Stir and combine gently. Bring to the boil and remove. Serve with buttered pasta.
