Sufra Dayma:

Chicken Cubes in Creamy Curry

Serves 4

Ingredients:

750 gms chicken breast fillets (cubed)

1 large onion (chopped)

3-4 garlic cloves

1 carton yoghurt (125 gms)

1 carton pouring cream (same filling size as above)

Juice of 2 lemons

1 tbsp curry powder

Butter + oil

Salt + pepper + turmeric + paprika

Method:

In a wide frying pan, gently fry chicken cubes in oil and butter, to golden on all sides. Remove on kitchen towels. In another pan, saut...e onion in butter. Drain and add to processor with a lump of butter, and add all remaining ingredients. Process to paste. Pour into a cooking pan. Add chicken and continue cooking over medium-low heat until chicken is tender. Serve with rice and a green salad or a yoghurt raita.
