Sufra Dayma:
Mustard- Glazed Chicken

Serves 4
Ingredients:
1 kg chicken (cut into 4)
1 onion (sliced thinly)
4 tbsp lemon juice
50 gms castor sugar
2 tbsp Dijon mustard
2 tbsp English mustard
1-2 tsp Worcestershire sauce
Salt + pepper + grated nutmeg + 2 bayleaves
butter + oil
Method:
In a large cooking pan, heat butter and oil. Gently fry chicken pieces to slightly brown on all sides. Remove with a slotted spatula and leave aside. Add onion and fry gently until softened. Season and stir until aromatic. Return chicken to pan. Cover over low heat and allow to cook in its own juices. In a glass bowl, add mustard, lemon juice, sugar and sauce. Mix well. When chicken pieces are almost done, add mustard mixture. Stir to combine. Allow to intgrate into chicken for 5 minutes. Remove bayleaves and serve with pasta or mashed potatoes.
