Sufra Dayma:
Fresh Tomato and Garlic Soup

Serves 4
Ingredients:
1 1/2 kg tomatoes (peeled, seeded, diced)
2 medium onions (finely chopped)
2 cloves garlic (crushed)
1 tbsp tomato paste
1 tbsp plain flour
2 cups chicken stock
2 tsp sugar
2 tsp fresh basil (chopped)
2 tbsp fresh parsley (chopped)
1/2 cup pouring cream
20 gms butter + oil
Salt + pepper
Method:
Heat butter and oil in pan. Add onions and garlic. Cook stirring until onions are soft. Add flour. Stir to combine. Remove from heat and add tomatoes stirring gradually. Add stock, paste and sugar. Simmer uncovered about 15 minutes, until slightly thickened. Allow to cool off. Blend or process until smooth. Bring to the boil. Add pouring cream. Stir and serve with croutons.
