Warm Steak and Blue Cheese Salad

Serves 2
Ingredients:
2 sirloin steaks (fat removed)
2 handfuls salad leaves (your choice)
100 gms creamy blue cheese or Gorgonzola (crumbled)
Dressing:
2 tbsp balsamic vinegar
1 tsp Dijon mustard
4 tbsp extra virgin olive oil
Method:
Heat a griddle (char-grill) to very hot. Oil and season steaks. Cook for two minutes each side for rare, three for medium. Whisk the vinegar and mustard with the oil. Slice the steak and toss with the salad and dressing. Top with cheese.
N.B.: Always keep steak to rest for five minutes under foil for the juiciest results.
