Spaghetti Alla Carbonara

Ingredients:
500 gms spaghetti
150 gms smoked turkey rashers (1 cm strips)
1 medium onion (chopped)
2 garlic cloves (crushed)
3/4 cup chicken stock
200 gms cream cheese
2 tbsp chopped parsley leaves
1 cup shavings of Parmesan cheese
Butter +Oil
Salt + pepper + chilli powder or
sauce (optional)
Method:
Heat butter and oil in a non- stick pan. Quickly fry turkey rashers for 2-3 minutes. Remove aside. Add onion and garlic. Stir only for 30 seconds. Add seasoning. Stir to combine. Add fried rashers and stock. Bring to the boil then cover and simmer for about 5 minutes. Whisk in the cream cheese and taste for seasoning. Meanwhile, cook the spaghetti in a large pan of boiling salted water until al dente. Drain thoroughly.
Return spaghetti to pan with the sauce and parsley. Toss well and serve immediately with thin shavings of Parmesan on top.
