Sufra Dayma:

Spanish Baked Chicken

Ingredients:

8 chicken drumsticks

1/2 cup sliced smoked sausages

2 medium onions (thinly wedged)

2 red capsicums (stripped)

1 tsp crushed garlic

400 gm can diced tomatoes

6 sprigs fresh thyme

2 tsp smokey paprika

2 tsp olive oil + butter

Salt + pepper + grated nutmeg

Method:

Heat oil in a large cooking pan. Cook drumsticks in 2 batches, for 4 minutes on each side to brown. Transfer to a plate. Add onion, sausage and capsicum. Cook until tender. Stir in paprika, garlic and remaining seasoning. Pour tomatoes. Stir to combine and bring to the boil. Return chicken drumsticks to casserole with thyme sprigs. Allow to cook for 5 minutes, then transfer to an oven-proof casserole dish. Cover and place in a preheated oven of 200 degrees. Cook until chicken is tender. Serve with crusty bread.
