Sufra Dayma:
Sweet and Sour Chinese Chicken Wings

Serves 4
Ingredients:
1 1/2 kg. chicken wings (joint and tips discarded)
1 tbsp. Crushed garlic
1/4 cup oyster sauce
1/4 cup hoi sin sauce
2 tbsp. pure honey
2 tbsp. chilli ketchup sauce
5 cups sliced or chopped mixed vegetables
2 tbsp. sesame oil
1 tbsp. grated fresh peeled ginger
salt (to taste) + pepper
Method:
Heat a large non-stick wok to high. Add sesame oil and work in batches to brown chicken wings. Add garlic and ginger. Stir for one minute and return wings. Stir fry for 2 minutes. Add all three sauces and third of a cup water. Season and stir to combine. Cover with lid and reduce heat to medium- low. Cook for 10 minutes, stirring occasionally. Remove lid and increase heat to medium- high. Add vegies stir frying for 5 minutes or until just tender and chicken cooked. Serve with instant noodles or with buttered spaghetti.
