Sufra Dayma:
Cheesy Chicken and Vegetables

Serves 4
Ingredients:
1 kg chicken breast fillets (halved then cut into 2-inch wide length-way strips) (approx. 2-3 strips each fillet)
1 can condensed cream of chicken soup
1 onion (finely chopped)
1 cup broccoli florets (trimmed into tiny pieces)
½ cup grated Edam (or) Gouda cheese
Salt + pepper + 2 bayleaves
1 tbsp corn oil
Method:
Heat oil in a deep, wide frying pan. Add chicken. Brown on both sides. Add bayleaves and a pinch of salt and pepper. Add half a cup of boiling water. Cover and allow to cook for ten minutes, over medium heat. Add onion, broccoli and mixed vegetables. Stir in soup, another half a cup of boiling water and season to taste. Cook for a further fifteen minutes only. Remove from heat and stir in cheese. Serve with rice and a green salad.
