Chicken and Avocado Cheese Quesadillas

Serves 4
Ingredients:
8 flour tortillas
3 cups shredded chicken meat (barbecued or roasted)
2 tbsp mustard
1 tsp lemon juice
2/3 cup firm tomatoes (finely diced)
1 large avocado (finely diced)
1 cup grated cheddar cheese
50 gms rocket leaves (torn)
Salt + pepper
Sour cream to serve
Method:
In a medium-sized bowl, mix chicken with mustard, lemon juice, tomato, rocket leaves, avocado, cheese, salt and pepper. Fill each tortilla with chicken mixture, then fold each to form a sandwich. Cook in a preheated sandwich press until toasted, or in a large, slightly greased frying pan, over medium-high heat. Serve two quesadillas in each serving plate with a dollop of sour cream aside.
