Sufra Dayma:

Spiced Crispy Baked Potatoes

Serves 8

Ingredients:

8 medium potatoes (peeled)

½ tsp of each: ground cumin + ground coriander + paprika +

Salt + pepper

1 tsp salt (extra)

6 garlic cloves (whole, skin on)

2 tbsp extra virgin olive oil

1 tbsp freshly squeezed lemon juice

Method:

Cut potatoes into equal sized chunky pieces. Soak in tap salty water with extra salt, for 15 minutes. Rinse and drain. Place potatoes in large bowl. Add all remaining ingredients, except oil. Toss to mix well. Place in a large baking tray, in one layer. Drizzle olive oil on top. Bake in a preheated oven of 200 degrees, until golden and crisp; (approx. 45min.). Serve as a meal accompaniment.
