Sufra Dayma:
Almond or Pistachio Coffee Biscuits

Makes 50 slices
Ingredients:
2 cups plain all-purpose flour
¾ castor sugar
½ tsp baking powder
2 eggs + vanilla
Rind of 1 lemon (grated)
2 eggs
160 gms shelled, sliced pistachios (or) slivered almonds
Method:
Preheat oven to 160 degrees. Line a baking tray with baking paper. Beat eggs, vanilla, sugar and lemon rind until thick and pale. Sift flour and baking powder over mixture. Add nuts. Stir until well combined. Turn mixture onto a floured surface. Lightly knead until smooth. Divide mixture in half. Roll each portion of dough into a 25cm x 5cm cylinder. Place each roll onto prepared tray and flatten lightly. Bake for 20 min. or until firm and slightly golden. Allow to cool completely. With a sharp knife, cut into thin slices. Place slices onto a baking tray and bake for 10 min. Turn biscuits and bake for a further 5 min., or until completely dry. Leave to cool on tray at room temperature. Serve with coffee or tea.
