Sufra dayma - Chocolate chip cookies

Yields approximately 24 

Method:

1 3/4 cups All-Purpose flour

1/2 cup castor sugar

1/2 cup brown sugar

1 tbsp molasses

1 large egg

1 tsp vanilla extract

1/2 tsp salt

1 tsp baking powder

1 cup chocolate chips

150 gm butter

 

Method:

Preheat oven to 170 degrees.  Combine butter, sugars, molasses, egg and vanilla.  Mix until pale in colour in a standing mixer.  In a large bowl, sieve combined flour, salt and baking powder.  Fold flour mixture gently by a hand spatula into butter mixture.  Combine well.  Add chocolate chips and fold them into the dough.  Drop heaped tablespoonfuls onto a nonstick baking tray, or onto a baking sheet; with enough room in space to spread.  Bake in preheated oven until edges get slightly darker; (approximately 12-15 minutes).  Remove from oven and allow to cool in tray, then layer onto a serving plate.  For thinner and less crispy cookies, you can add more butter; (50 grams more).
