Creamy Spinach and Minced Beef

Serves 4

1 kg. fresh spinach leaves, chopped (or) 2 x 400 gm. frozen packs
1 large bunch green coriander (coarsely chopped with stems)
4 or 5 spring onions (sliced with green stems)
1 tsp. crushed garlic
250 gm. cooked minced meat
250 gm. mixture of grated yellow cheese and mozzarella
250 ml. pouring cream
Salt + pepper + grated nutmeg
1 tbsp. olive oil


Heat an empty medium cooking pan. Add oil and onion. Lower heat to medium and stir until translucent. Add garlic. Stir then immediately add seasoning. Stir for a moment. Add coriander and spinach. Stir to wilt. Cover and allow to cook in its own juices, for about 15 to 20 minutes. Add minced meat, stirring it in. Allow to combine with spinach mixture only for 5 minutes. Add cream and stir. Bring back to a boil and remove from heat. Add cheese off heat, stirring it in to integrate in mixture. Serve immediately with boiled potato or rice.
