Sufra Dayma: Feta and mint filo pastry Triangles



Makes 36


12 sheets philo pastry (fully thawed)

350 gms Greek feta cheese

2 tbsp fresh mint leaves (finely shredded)

1 egg (lightly beaten)

1 tsp lemon juice

Salt + pepper + dried oregano (optional)

125 gms butter (melted)



Preheat the oven to 180 degrees. Lightly grease 2 large oven trays. To prepare the filling: Add feta, mint, egg, lemon juice and season.  Mash feta, combining it with other ingredients.  Spread two sheets on a working table.  Brush each with butter and layer them together lengthwise.  Cut stack into 6 long equal strips. Spoon a quantity, almost one tablespoonful of cheese mixture into a corner of each strip, folding pastry diagonally across filling from opposite corner, to other edge, forming a triangle.  Keep folding to reach end of strip until forming a triangle is complete. Place on prepared tray.  Repeat with remaining pastry and filling.  Brush triangles with butter.  Bake in preheated oven for 12 - 15 minutes, or until slightly golden.  Remove from oven and serve hot.
