Serves 6-8


1 kg potato, skin-on (scrubbed, washed, rinsed) 

300 gm cooked minced meat

100 ml whole milk

2 eggs (beaten with a dash of white pepper and salt)

Breadcrumbs (for coating base and sprinkling on top)

40 gm butter

Salt + white pepper 



Boil water in a large pan.  Add potato to boiling water.  Bring back to the boil.  Cover and simmer to cook potato until done.  Remove on to a plate; by means of a slotted spatula to drain from water.  Discard water.  Peel and mash potato with a hand purée rotary vegetable mill; on the finest degree, over the butter, in a large pan, to melt, away from heat.  Place pan over medium heat.  Stir potato mash to blend well with butter.  Add salt and pepper.  Stir milk into mixture until incorporated and absorbed.  Remove away from heat and allow to cool off and become warm.  Taste for salt.  Stir in eggs until well incorporated and blended.  Return pan over heat and stir until about to bubble.  Spread half the quantity of potato mixture over a buttered base of a medium-sized baking dish, coated with breadcrumbs, excess discarded; reaching an inch and a half high.  Top with cooked minced meat; distributed evenly to cover potato mixture.  Then spread over minced meat, remaining quantity of potato mixture, to completely cover it.  Sprinkle an amount of breadcrumbs; forming a thin layer, all over the top.  Bake in a preheated oven of 200 degrees C; until top is golden; (approximately 35-40 minutes).  Remove from oven.  Allow to rest for ten minutes then slice and serve.
