Serves 4-6


2 cups Fuul medamess

1 cup cooked minced beef

1 tbsp minced garlic

2 medium tomatoes (chopped)

1 green chili (finely chopped)

1/2 cup thick tomato juice (tetra packed)

2 tbsp chopped parsley leaves

2 tbsp extra virgin olive oil + extra to drizzle

Salt + pepper


This recipe needs two frying pans.  Add oil and garlic together into one pan; over medium heat.  Stir gently until garlic turns yellowish in colour.  Stir in tomato and chili.  When tomato starts releasing its waters; add fuul.  Stir to mix and incorporate.  Add a very small amount of hot water; if needed.  Heat through and remove away from heat.  Meanwhile; heat the other frying pan on medium.  Add minced meat and tomato juice.  Stir to distribute and mix with sauce.  When it slightly thickens, add salt and pepper.  Pour over fuul mixture.  Mix contents of two pans gently.  Season once more (to taste).  Pour into serving bowl.  Add parsley, then drizzle extra olive oil on top.  Serve with boiled eggs aside, white cheese, baladi bread, pickles and arugula with lemon juice.
