Oriental pesto baked salmon steaks

Serves 4-6

6 salmon steaks (skinned)
Pesto Sauce:
1 bunch each:
Parsley, coriander, dill, leaves only (chopped)
1 tsp minced garlic
1 tsp ground cumin
Juice of 2 lemons
1 medium pickled lemon (chopped)
1 tbsp roasted pine nuts
1/4 cup extra virgin olive oil
Salt + pepper + hot paprika (optional)

Place all pesto ingredients in a mini food processor. Blend to a smooth paste. Lightly season all sides of steaks with salt and pepper. Cover each side of salmon generously with pesto. Place in a baking dish and in one layer. Cover dish tightly with foil and bake in a preheated oven at 220 degrees, only for 12 minutes. Uncover and continue baking for three extra minutes, then remove from oven. Serve with potato mash, grilled vegetables and the remaining unused amount of processed pesto, if extra sauce is desired to add at table.
