Goat Cheese Soufflé

Ingredients:

120 gms goat cheese (crumbled)

4 large eggs (separated)

1 egg white (extra)

60 gms flour

300 ml whole milk

1/2 tsp dried thyme

60 gms butter

Extra butter for greasing

Salt + pepper

Method:

In a cooking pan, melt the butter and add the flour. Stir for one minute and remove from heat before it discolours. Pour the milk whilst stirring and bring back to the heat. Continue stirring until a white sauce is formed. Simmer gently whilst still stirring, until it thickens. Remove from heat and stir in the cheese and thyme. Leave to cool off until just warm, then add whisked egg yolks. Season with salt and pepper, and stir to fold in yolks until well combined. Preheat oven to 200 degrees. Butter a 15cm soufflé dish. Whisk egg whites, plus extra egg white, until stiff peaks are formed. Fold into the cheese mixture. Immediately pour into buttered dish, filling it about two thirds full. Bake for 30-35 minutes. Serve immediately.
