Sufra Dayma:
Moist Chocolate Cake

Ingredients:
2 1/2 oz flour
7 oz good brand plain chocolate (broken into squares)
7 oz butter
4 oz castor sugar
4 whole eggs
4 egg yolks
1 1/2 tsp vanilla essence
Pinch of salt
Method:
Melt chocolate and butter over low heat bain-marie pan, filled with little water boiling up, and in a large glass bowl. Leave to melt for 6 minutes, then stir away from heat to combine. With an electric hand mixer, beat eggs, sugar and vanilla until frothy and a trail is drawn on batter: (this procedure will take no less than 6 minutes of beating). Fold into cooled off chocolate to well combine, with a spatula. Add sifted flour and salt, folding in gently. Pour into lightly greased cake tin or pan, and bake in preheated oven of 180 degrees, or gas mark 6.
